Okay, I admit the first time I heard a friend order a fish taco in Rosarito Beach, Mexico, I thought, “Ewww, gross!” Then I tasted it. Now it’s one of my all-time favorite beach bites.

Rubio’s, which popularized the fish taco in So Cal, makes a killer Baja-style taco. Try their signature recipe, The Original Fish Taco. The fish is hand-dipped in seasoned beer batter and cooked till it’s crispy. It’s then topped with white sauce, salsa and fresh cabbage, and served on a warm stone-ground corn tortilla. Squeeze a slice of lime over the top. An authentic taste of the Baja coast!
